Organic Olive Oil: Il Moraiolo

Our organic oil is made exclusively with “Moraiolo” olives, which are hand-picked on the hills of Campello sul Clitunno. All the plots are in the Assisi – Spoleto olive belt, therefore synonymous with quality.

Organic Production
The production of our oil uses exclusively the result of the natural cycle, without the use of chemical or organic fertilizers. All the olive trees are automatically subjected to natural fertilization through the grazing of our livestock among the crops themselves.

Cold extraction
The oil is obtained from an artisanal process at an oil mill in Campello sul Clitunno where we perform cold extraction, which preserves the natural qualities of the product.



Organic Olive Oil: the phases
The moment of maturation
Organic olive oil is linked to the natural ripening cycle of olives. Ripening occurs, depending on climatic factors, between the end of October and mid-December.



The olive harvest, considering that it is done manually and only by the family and in an impervious position along the slopes of the hills (naturally rich in rocks and steep points), keeps the whole family busy for about 2 months every year.


What machinery is used for harvesting?
No machinery is used for harvesting as we only use sheets and boxes to collect the ripe product. At the end of the harvest the only means used is the one that allows us to transport the olives downstream, where the mill is located.

Organic Olive Oil: the zero-mile product
Our olive grove is located on the edge of our house and the oil mill is less than 1 km away, so we can safely say 100% that this oil is a truly zero-mile product. If you want to taste the typical products of the Spoleto and Campello sul Clitunno valleys, you will definitely have to find a free moment. To taste the products of our land, combined with our zero-mile oil, you can come and visit us in our territory and take one of the many gastronomic tours that this area offers.
Bottling
The oil is then left to decant for about 15-30 days and then bottled in glass containers, all in our laboratory.
