The menu is constantly updated based on seasonal raw materials.
Appetizer with goat and sheep cheeses and combinations of various types of jam that I prepare with seasonal fruit: peaches, apricots, plums, cherries and apples from local farmers; pomegranate jam and figs from our plants. The honey is produced by our neighbor’s farm.
Cold cuts of our own production, bruschetta with organic oil from our farm, legumes and lentils from Castelluccio di Norcia and other specialties enriched with vegetables from our garden such as fried Anita courgette flowers and panzanella. The first courses are cooked according to the local tradition. Strangozzi with truffle and asparagus, penne alla norcina, pasta with selected meat sauce, tagliolini in broth and soups with legumes.
The second courses will be given by a wide choice of selected meat at Km 0 including chicken, rabbit, veal, lamb, pork and pigeon raised outdoors by local farmers, personally chosen to guarantee the high quality of the meat.
The rabbit is cooked in porchetta, baked in the oven with potatoes from our garden, stewed and fried.
Chicken with peppers, cacciatore style, cooked in a wood oven with potatoes.
Lamb stew with truffles, roasted or grilled.
Baked stuffed pigeon.
Pork chops and bacon cooked on the brazier seasoned with wild fennel collected by us and dried, roast sausages of our own production.
Seasonal side dishes; in spring and summer a wide choice of courgettes, tomatoes, green beans, cucumbers and various types of salads while in autumn cabbages, Savoy cabbage, turnips and winter salad.
All desserts such as tarts, donuts or cakes are prepared in-house and handmade.
The coffee liqueur, chocolate liqueur, licorice liqueur and limoncello are made by us.
