What type of olives are present?

Inside the olive groves we only have the monoculture of olives of the IL MORAIOLO variety. With this “cultivar” the plants are lower, more suited to stony soil. Although its production is much lower than that of other types of olives (such as Leccino or Frantoiano), Moraiolo has a superior yield in terms of final product and its quality.

How does fertilization happen?

Organic olive oil is made with specific procedures: zero chemical fertilizers is one of the rules. In the case of the olive groves of the Il Moraiolo farm of Giordano Fortunati, there are no other fertilizers except the horses that graze on the plots where our trees are. All year round our horses are left inside the plots and naturally fertilize the olive grove.

Producing organic olive oil: what is needed?

The work we do to harvest olives in our olive grove lasts about 2 months. This, however, is not the only commitment, it represents only a part of the time we put into managing the cultivation of olives for organic oil.

The activities that we plan every month are different and are carried out specifically for the production of a quality product, we pay attention to the management of the environment and the care towards the olive trees.

Olive tree management

We prune all the plants continuously; on average, every 2-3 years we prune a single plant. There is no uniform pruning throughout the plot, the area is pruned carefully. This way we have the opportunity to create the perfect environment for the plants to regenerate. Each plant will be able to see its trunk and branches grow in harmony with the rest of the environment.

We pay a lot of attention both to the single plant and to the entire ecosystem: the production of oil is an important topic. Each component is essential: the sun’s rays, the water that penetrates the soil and any collateral factors. Everything is constantly monitored to avoid problems.

A natural environment far from urban areas

Il nostro oliveto è a circa 15 km dal centro urbano di Spoleto e a circa 1 km dal frantoio dove realizziamo le operazioni di estrazione a freddo.
